Almond cheese crackers

200 g almond flour
1 tsp sea salt
2 eggs
2 tsp dried thyme
100 g grated old cheese like pecorino

  1. Preheat oven to 180°C.
  2. Mix all ingredients and form a ball of the dough.
  3. Place dough ball between two large sheets of baking paper and roll out until very thin (2 to 3 mm).
  4. Take the top piece of baking paper off and put on a baking tray.
  5. Cook until golden brown (around 10 minutes).

-> eat it with vegetables and lots of tomato sauce.
