Serves 8 – 10
80 g butter, at room temperature
80 g cane sugar
285 g spelt flour
2 tsp baking powder
1/2 tsp sea salt
4-5 baking apples, peeled, cored and sliced
100 g oats
2 tbsp maple syrup
3 tsp cinnamon
40 g butter
a handful of raisins
Preheat the oven to 180°C. Butter a springform pan.
To make the cake: in a large bowl, mix butter, sugar, and eggs. Beat for 2 to 3 minutes or until creamy. Add the flour, baking powder, and salt and mix until well combined. Scrape the batter into the springform pan and arrange the apples on top, pushing the apples slices gently into the batter.
For the crumble: blend oats and raisins in the blender. Put the oat raisin flour together with the rest of the crumble ingredients in a large bowl and mix until crumbles form. Sprinkle the crumble over the cake.
Transfer to the oven and bake for 50-60 minutes or until golden on top. If you insert a skewer in the center, it should come out almost clean.
Let the cake cool before taking it out of the pan.
