Banana muffins

50 ml coconut oil
100 g yoghurt
50 g almond flour
2 ripe bananas
1 egg
80 g spelt flour
1 tsp baking soda
1 tsp vanilla powder
1/2 tsp nutmeg
1/2 tsp cinnamon


  1. Preheat oven to 180° C.
  2. Mash the bananas.
  3. Combine all ingredients in a bowl and mix well.
  4. Divide the mixture between the paper cases and bake for 40 minutes or until golden and an inserted skewer comes out clean.
