Breakfast toast buffet

Toast 1 = ricotta + spinach + roasted cherry tomatoes + black pepper and salt

Toast 2 = scrambled egg + spinach + Hot Chili Sauce

Toast 3 = avocado + ricotta + Hot Chili Sauce

Toast 4 = scrambled egg + avocado + black pepper and salt

Toast 5 = ricotta + roasted cherry tomatoes + black pepper and salt

Toast 6 = scrambled egg + roasted cherry tomatoes + black pepper and salt

PREPARATION:

  1. Roast the cherry tomatoes in a non stick pan with some olive oil.
  2. Sauté the spinach very shortly with some olive oil.
  3. Crack eggs into a bowl, use a fork to beat them together. Add butter to a warm pan, carefully pour in the eggs, stir slowly with a wooden spoon. Keep gently stirring until the eggs still look silky, slightly runny and then remove from the heat.

Assemble the toasts ( I used sourdough bread) as explained above.
