Carrot cake overnight oats

50 g oats
grated carrot, from 1 small carrot (I used a yellow carrot)

15 g raisins or dried cranberries
250 ml milk or almond milk
1 tsp ground cinnamon
zest of half an orange
Topping:
nuts (cashew, pistachios, almond,…)
chia seeds
bee pollen

  1. The night before, mix oats, carrot, rainsins/cranberries, milk, cinnamon and orange zest together, cover and refrigerate.
  2. The next morning, remove from the fridge and give everything a good stir.
  3. Spoon into a bowl, garnish with extra nuts and seeds, and some beepollen.
