Carrot muffins

9 muffins

75 g almond flour
75 g spelt flour
1 tsp cinnamon
1 tsp baking soda
160 g carrots – grated
100 ml greek yoghurt
2 eggs
30 g coconut oil
60 ml maple syrup
carrot muffin

  1. Preheat oven to 190° C.
  2. Line a muffin tray with paper cases.
  3. Put all ingredients together in a bowl and mix until combined.
  4. Divide the mixture between the paper cases until 3/4 full.
  5. Place in the oven for 35 tot 40 minutes or until golden and an inserted skewer comes out clean.

-> top them with greek yoghurt
