Chia blood orange pudding

Serves 1:

juice of 2 blood oranges
1 cardamom pod
3 tbsp chia seed

topping: berries + mint + pistachios

  1. Mix together juice and cardamom seeds.
  2. Add chia seeds and mix well.
  3. Pour into a small bowl or glass and let sit 10 minutes.
  4. Stir again and refrigerate for 2 hours or overnight.
  5. Top with mixed berries, mint and pistachios.
