Grapefruit marmalade

2 pink grapefruits
2 oranges
6 cardamom pods
4 tbsp coconut sugar
3 tsp 5-spices (sezchuanpepper, cloves , fennel, anise, cinnamon)
10 – 15 dried apricots
4 tbsp chia seeds

  1. Peel the grapefruit and oranges (also the white part under the peel) and cut into quarters
  2. Add the quarters to a medium saucepan, along with the spices and the apricots
  3. Heat over medium-high heat until the fruit begins to break down and become syrupy, about 20 minutes
  4. Stir in the coconut sugar and chia seeds
  5. Ā Blend the marmalade until the desired consistency is reached
  6. Transfer the marmalade to a clean glass jar and refrigerate for a few hours
  7. The chia seed will absorb any leftover liquid
