Pineapple energy balls

For 6 -8 energy balls:

100 g dried pineapple
55 g shredded coconut
2 to 3 tbsp tahin
1 tbsp honey
sesame seeds

  1. Soak the dried pineapple in hot water for 10 minutes.
  2. Add all of the ingredients to a food processor or high speed blender and blend until the mixture turns into a paste or dough like consistency. (Add a tablespoon of water if needed.)
  3. Scoop out heaping tablespoons of the mixture and roll into balls.
  4. Cover with sesame seeds.
  5. Store the energy bites in an airtight container in the refrigerator.
