For 6 -8 energy balls:
100 g dried pineapple
55 g shredded coconut
2 to 3 tbsp tahin
1 tbsp honey
- Soak the dried pineapple in hot water for 10 minutes.
- Add all of the ingredients to a food processor or high speed blender and blend until the mixture turns into a paste or dough like consistency. (Add a tablespoon of water if needed.)
- Scoop out heaping tablespoons of the mixture and roll into balls.
- Cover with sesame seeds.
- Store the energy bites in an airtight container in the refrigerator.
