Roasted carrots with green dressing

Serves 2

young carrots, peeled
2 tbsp butter, melted

1 tbsp apple cider vinegar
50 ml water
3 tbsp soy sauce
1 tsp miso
2 tbsp lemon juice
1 clove of garlic
50 g fresh basil
2 tbsp nutritional yeast


  • Preheat your oven to 200°C.
  • Melt the butter.
  • Place the carrots in a roasting tray and toss them with the butter.
  • Season with salt and pepper.
  • Cook for 30 to 40 minutes until just tender.
  • In the meantime make your dressing by mixing all ingredients in the blender.
  • Once your carrot are done, pour the dressing over the carrots on the warm baking tray. (For some reason the taste of the dressing is so much better than when it’s cold. Still wondering why…)

Fits very well with fish.
