1 cooked beetroot
1/2 blood orange
150 ml water
2 tbsp date/maple syrup
35 g oats
- Blend the beetroot in the blender together with 1/2 blood orange juice, water and date/maple syrup.
- Throw everything (except for the avocado) into a mason jar the night before.
- Mix it all together and refrigerate overnight.
- In the morning, chop up the avocado and serve with the overnight oats.
You can add more toppings if you want. For example: nuts, seeds, berries, …
