Savory overnight oats with beetroot and avocado

1 cooked beetroot
1/2 blood orange
150 ml water
2 tbsp date/maple syrup
35 g oats
1/2 avocado


  1. Blend the beetroot in the blender together with 1/2 blood orange juice, water and date/maple syrup.
  2. Throw everything (except for the avocado) into a mason jar the night before.
  3. Mix it all together and refrigerate overnight.
  4. In the morning, chop up the avocado and serve with the overnight oats.


You can add more toppings if you want. For example: nuts, seeds, berries, …
