Walnut banana bread

Ingredients for 1 bread:


2 ripe bananas
2 tbsp peanut butter
5 dates (pitted)
195 g spelt flour
200 ml almond milk
1 tbsp baking powder
1 handful of crushed pecans
1 handful of crushed walnuts
2 tsp vanilla powder
a pinch of salt

1 banana
around 3 tbsp maple syrup

  1. Preheat oven to 200°C.
  2. Grease a bread loaf pan with a drop of coconut oil or use greaseproof paper.
  3. Coarsely chop the nuts.
  4.  Mix 2 bananas, peanut butter and dates in the blender. (the 3rd banana is for the topping)
  5. In a large bowl put together the flour, baking powder, nuts, vanilla, salt and milk.
  6. Add the mixed bananas.
  7. Stir until combined.
  8. Pour the mixture into the loaf pan.
  9. Slice the 3rd banana in two and carefully put on top. (as on the picture)
  10. Finish of with a drizzle of maple syrup.
  11. Bake for about 35-45 minutes or until golden.
